Paneer makhani

Hi everyone this is my third recipe Paneer Makhani. Which is my most favorite vegetarian dish. So here we go

PANEER MAKHANI 

INGREDIENTS:
1. 200 grams paneer
2. 250 grams ripe and red tomatoes or 4 to 5 medium rip and red tomatoes 
3. 2 to 3 tbs cream- low fat 25% to 35% fat or 1/2 cup milk 
4. 2 tbs butter 
5. 1 Tej patta (Indian bay leaf) 
6. 1 tsp ginger garlic paste or 1/2 inch ginger + 4 small garlic crushed to paste in a mortar pestle 
7. 1/2 tsp red chilli powder
8. 1 to 2 green chilies 
9. 1 tsp garam masala 
10. 1/2 tsp sugar - add as required 
11. 1/2 tsp kasuri methi leaves powder 
12. 10 cashew nuts,  soaked in warm water 
13. A pinch of green cardamom powder 
14. 1 tsp of tomato sauce or ketchup 
15. Salt as required. 
16. Warm water as required



METHOD:
* Soak cashew nuts in warm water
* Making tomato puree for paneer makhani
   First rinse and chop the tomatoes in a blender     or grinder make a smooth puree of the                 chopped tomatoes no need to add any water         while blending the tomatoes . Keep the tomato     puree aside.
* Making Paneer Makhani
Melt butter in a pan first add bay leaf and saute for a few seconds till aromatic.
Then add the crushed ginger garlic paste and saute till the raw aroma of the ginger garlic goes away. Add the tomato puree and stir well.
Now add the red chilli powder and saute the mixture till the fat begins to leave the side of the tomato paste add tomato ketchup. Takes about 14 to 15 min on a low flame keep on stirring often.
When you see the tomato mixture clumping together and the fat leaving the sides then add water . Stir and simmer until the gravy or sauce thickens a bit takes about 7 to 8 mins on a low flame.
Then add the slit green chilies and stir and simmer for a minute. Then blend the soaked cashew nuts and add in the gravy.
Add sugar, cardamom powder, kasuri me this, and salt stir and then add the paneer.
Simmer paneer makhani gravy for 2 to 3 mins till the paneer cubes are cooked. Lastly add milk or cream and gently stir. Switch off the flame and then sprinkle with garam masala give a gentle stir again and sprinkle some coriander for garnish.
